Finder-based Drag and Drop from an iPod’s harddisk to a computer’s harddisk is possible, but there’s a lot additional work required afterwards: Each audio files has to be inspected (for example with the Finder’s “Preview” function) to find out the track, album and artist names. iTunes lets you sync music to your mobile devices, but it doesn't allow recovering music from them.
